This is a big favorite of mine, while I haven’t used the recipe I linked because the method is use is floating around in my head, it is basically the same.
You cant beat that sweet crunch and chew.

I want you to like them as much as I do. I literally cried making these because I didn’t get to eat them personally. But the recipe by Savory Sweet Life and it is actually called Rocky Road Marshmellow Pops.

It’s been a whole since I last cooked and since I slept really badly last night, around 4 am I got up and made cupcakes an muffis and cookies
But this time I wanted something different
This cake requires
Ginger tea ( any variation will do)
Half a cup of milk
A cup of boiling water
Vanilla bean (vanilla extract or essence will do- add like 3 table spoons)
2 cups of sugar
And of course about 2 and a half cups of flour
how to put it together
Oven on to 175 c… Like 350 f.
Boil some water and measure a cup of water and put two tea bags in. Let it steep for 20 minutes.
Meanwhile get your spice (cinnamon and nutmeg)
I put in like 2 tablespoons of each into a bowl.
then add your two cups of flour into the same bowl
Get you vanilla bean and slice it down the middle and scrape out the black essence or what ever it is with a knife and put it into a separate bowl.
Add the sugar to the vanilla bowl and give it a whisk to mix.
Check on your tea.
Ok so pour your tea without the tea bags once it’s really strong into the sugar mix.
Get your butter and let it sit for a while until its soft. Add it also to your sugar mix, whisk and add an egg between mixing. Once everything is added you can slowly combine it with the flour mix. Making sure there is no lumps. I have an aversion to using a lot of electronic mixers on things I can do by hand doesn’t mean that you can’t use your electronic mixers
Then half time add half the milk and keep mixing. Going back and forth between the milk and the tea and sugar mix.
Grease a cake pan ( if you want you can mix half a cup of vegetable oil into the cake mix before cooking) I used a bundt tin because I just like them. And tadah!
mine was done perfectly in about 30 minutes but it can take longer depending where you put it in the oven. It’s done when the skewer comes out clean
Ok still in the baking mood.
I found puff pastry in the freezer!
YOU KNOW WHAT THAT MEANS?!?
Normally I would make the pastry by hand but it is there so I will use it.
Before you do anything
Pre heat your oven. 200 celcious fan forced.
Half a cup of icing sugar
A splash of boiling water
Lots of cinnamon, I use about 3 teaspoons but I love cinnamon, so maybe use about two teaspoons if you aren’t me.
20 grams of melted butter.
Get it out of the freezer and separate it and put it on the bench and let it thaw
Put cinnamon and sugar in a bowl
Add a splash of boiling water and mix like you mean it with a spoon.
Add butter and mix!!!
spread it now on your rolled out puff pastry
And roll it up into a log!
Chop them up!
And put them on your baking tray … You should have covered it in baking paper at some stage. 🙂
Slam it in the oven or place it in gently.
Rescue in 20 minutes or if you think they are done and ENJOY THE SUGARY GOODNESS!
Ok so about half an hour ago I made cupAcakes. They were very delicious but now I am left craving more sugar.
Damn I guess that means more cooking.
Alright I mentioned in my last post that cooking ingredients are scarce.
I’m left with not much… But I think I can make a
1. Oil spray
2. Half a cup of coco powder.
3. Half a cup of boiling water.
4. 125 grams of melted butter
5. 1 an a 1/4 cup of icing sugar ( I don’t think it matters what type of sugar you use.)
6. 1 and a 1/4 cups of self raising flour.
7. Three eggs.
READY TO GET STARTED?
Preheat oven to 170!
Ok so you have your things and a kitchen I hope.
Get your coco
and boiling water and mix together in a bowl until smooth paste. SET ASIDE.
Beat the butter and the sugar.
Beat in eggs one at a time.
Oh and it is time to ditch the beaters again- swap to a wooden spoon fold in the flour.
Then fold in the coco paste 🙂
Then give a quick spray to your cake pan with the oil spray.
Spoon in the cake batter. And put in your oven. Rescue in an hour
Plain old CupAcakes
Well we all love cup cakes, unfortunately one of my neighbors husbands died last night and the poor lady is now left alone with barely any family. She is in her late eighties and the sweetest thing.
I decide to go on a cooking spree… Only problem is that my muma has gone vegan….. Finding things in our house to cook with is impossible everything I seem to buy for baking disappears instantly.
So I only have a bit of everything left. 😀
Ok on to the recipe
What Do I Need?
1 mixing bowl
Cup cake pan
WHAT DO I REALLY NEED
125 grams of butter
1 small can of sweeten condensed milk ( I would normally use sugar but I only had a little which I wanted to use on something else)
1 teaspoon of vanilla
1 and a 1/2 cups of Self Raising Flour
1/4 cup of milk
WHAT TO DO WITH ALL THESE THINGS?
PREHEAT OVEN! 180degrees celcious.
1. Mix the butter (melted) and the sweetened condensed milk and vanilla with the beaters.
2. Beat in eggs one at a time mixing after each one.
3. Ditch the beater and use a wooden spoon to mix in the flour.
Then mix in the milk. 🙂
Then give your cupcake tin a quick spray. I used what ever I can find in the house. I used the one bellow
Then spoon the cup cake mix into the tin.
Put them in the oven and BAM YOU HAVE THESE AMAZING CUPCAKES!
Only one left 🙂
Adaptation of the Banana Raspberry CupAcakes,
Ok, so we all know how much I was complaining about the original recipe of this. Well I followed the recipe and it turned out ok.

RESTORED MY FAITH IN COOKING
in my haste to try it… well I didn’t get time to take a picture of it before I inhaled it all.
I liked it so much I had to do my version the next day.
Ok so exactly the same… except I added way more yoghurt and I added an extra 4 really ripe bananas.. then it hit me the only thing that was different from banana bread was the yogurt and the lack of butter…
So what did I do? I added the butter to it, I used about 30grams melted and just mixed it into the batter.
But wait there is more!
I added Walnuts, about half a cup chopped and petits, those little green seeds.
Put it in the oven at a lower temperature and left it in longer. and PERFECT!!!!!
Ok So It Is Cooking Time.
I have been so sucked under lately that I havent done anything, when I get stressed and agitate, I have many things I like to do, Cooking and making jewelry is not one of them, I find It sometimes makes me worse as I tend to insult the inanimate objects.
But this time I know It will be relaxing. I am going to do something I struggle to do. I will follow the recipe. Usually I would disagree with the cookbook and end up ignoring it and making a mess/ waste of food. Not this time though. I am going to follow it word for word and show you too!
What do you need?
- Surface to make a mess on.
- fork (You will see why later)
- muffin tin.
- measure things
- big mixing bowl.
What do you really need?
- 1 cup of Self Rasing Flour
- 1/2 cup of whole meal self rasing flour
- 1/2 a cup of sugar (on the next batch i am going to halve it or maybe just get rid of it and replace it with a banana, but stick to the recipe and I’ll post an alternative one later once I have tried it)
- 1 cup of greek yogurt
- 1/2 mashed banana!!! ( I adore bananas and even though I really want to add more this time. I will stick to half a cup – this is where the fork comes in)
- 1/4 cup oil (E why do I want to add that much oil???)
- 1 egg
- 1 cup of berries ( I only have raspberry. so that will have to do)
It may just be me but I REALLY want to alter this recipe. I think I’ll give it a once off correctly and then try to make a gluten-free alternative. I am dying to add some seeds to this recipe. But we will have to see how it goes.
What are you supposed to do with all these things?
Well I can help with your awesome question:
- get your oven and turn it on. You will want to set it to 170 celsius if it is fan forced. and 190 celsius if it isn’t.
- whisk the yogurt, banana, egg and oil together in a jug
- in the bowl mix the flours and sugar together.
- add liquid sludge mixture to the suspicious white powder and stir until JUST combined.to me when ever I read ‘just combined’ i always ignore it. But not today. Today we stick to the recipe.
- Add the berries (not the poisonous type please) and FOLD it in. quickly grease the baking tray made for muffins/cupcakes and BAM put them in and bake for about 12 minutes.
You should now have beautiful little cupAcakes.
