Spice Cake

It’s been a whole since I last cooked and since I slept really badly last night, around 4 am I got up and made cupcakes an muffis and cookies
But this time I wanted something different
This cake requires

Ginger tea ( any variation will do)
Butter (250grams)
Half a cup of milk
A cup of boiling water
3 eggs
Vanilla bean (vanilla extract or essence will do- add like 3 table spoons)
Cinnamon
Nutmeg
2 cups of sugar
And of course about 2 and a half cups of flour
how to put it together

so exciting!


Oven on to 175 c… Like 350 f.
Boil some water and measure a cup of water and put two tea bags in. Let it steep for 20 minutes.

Meanwhile get your spice (cinnamon and nutmeg)

20130310-065446.jpg I put in like 2 tablespoons of each into a bowl.

20130310-065714.jpg then add your two cups of flour into the same bowl

Get you vanilla bean and slice it down the middle and scrape out the black essence or what ever it is with a knife and put it into a separate bowl.

Add the sugar to the vanilla bowl and give it a whisk to mix.

Check on your tea.

Ok so pour your tea without the tea bags once it’s really strong into the sugar mix.

Get your butter and let it sit for a while until its soft. Add it also to your sugar mix, whisk and add an egg between mixing. Once everything is added you can slowly combine it with the flour mix. Making sure there is no lumps. I have an aversion to using a lot of electronic mixers on things I can do by hand doesn’t mean that you can’t use your electronic mixers

Then half time add half the milk and keep mixing. Going back and forth between the milk and the tea and sugar mix.

Grease a cake pan ( if you want you can mix half a cup of vegetable oil into the cake mix before cooking) I used a bundt tin because I just like them. And tadah!

20130310-070929.jpg mine was done perfectly in about 30 minutes but it can take longer depending where you put it in the oven. It’s done when the skewer comes out clean
